Sloppy Joes for a Crowd |

A large pot of Sloppy Joe made from scratch.
Ingredients4 pounds lean ground beef or buffalo2 tablespoons grill seasoning, or 1 tablespoon salt and 1 teaspoon pepper 2 large onions, chopped 6 cloves garlic, chopped 2 red bell peppers, seeded and chopped 1-4 oz. can tomato paste 2-15 oz. cans tomato sauce 1/2 cup brown sugar 2 tablespoons Worcestershire sauce 1/4 cup red wine vinegar 16 hamburger buns DirectionsBrown the meat in a large skillet or Dutch oven until no longer pink. Brown in batches, if necessary. If you use lean meat, there shouldn't be more than a tablespoon of fat. If there is more, drain off as much fat as you can. Stir in the grill seasoning, or salt and pepper. Add the chopped onions and bell pepper, and cook over medium high heat for at least 5 minutes, stirring often. Vegetables should soften, but not brown. Add the tomato paste, and stir well for a couple minutes as the paste loosens up. Add tomato sauce, sugar, Worcestershire sauce, and vinegar. Stir to combine and bring to a simmer for at least 15 minutes. Or, if you prefer, put in a slow cooker on low heat until party time. Taste for seasoning before serving. There should be a good balance of sweet and vinegar, and enough salt.CommentsIf you want to make this healthier, try bison, a.k.a. buffalo. It's healthier than chicken, and tastes like beef. It tends to dry out easily, but you'll never notice in this recipe. Lots of supermarkets are carrying ground buffalo, or you can look for a local farm in your area.
