A super easy one and tasty one pot dinner. Just remember to pick up two things at the grocery store: sweet potatoes and a pork roast. The rest of the ingredients are probably already in your pantry. How easy is that?
Ingredients2 pounds pork tenderloin or roast2 tablespoons canola oil 2 large sweet potatoes, peeled and sliced 1/4 inch thick 1/2 cup brown sugar 1 teaspoon onion powder 1 teaspoon garlic powder 1/2 teaspoon black pepper 1/4 teaspoon cayenne pepper DirectionsIn a Dutch oven, heat the oil over medium high heat. Sear the pork roast on every side until a golden brown crust forms.Add the sweet potatoes to the pot, along with the rest of the ingredients. Cover with a tight lid and simmer for 45 to 50 minutes, or until pork is cooked through and tender.
